Pairing: Lamb, red meats, roast guinea fowl. Hard mountain cheeses a little hard.
Storytelling: The passion for Medoc wines and their unquestionable « character » was passed over generations and the current generation seeks out the same spirit of traditions such as planted grape varieties of the Medoc, the respect for the "terroir" through a reasoned cultural approach, never using weed killers.
Producer: Chateau Hourbanon In 1974, this family estate that was originally established in 1895, was entirely restructured by Remi Delayat, who was passionate about Medoc wines. Hugues Delayat took over the familial estate in 1997. He operates with a great respect of the typicity of the Medoc wines, of the terroir and environment. The vines are 40 years old, planted at high-density and low yield. It leads to very concentrated wines, mainly based on Cabernet-Sauvignon, with a great ability to age.
